Zesty Guacamole: Submitted By Patricia Martell




Ingredients:

2 ripe avocados
1 small plum tomato (chopped)
2 tsp. lime juice
2 tbsp. chopped cilantro (fresh)
1/4 cup chopped red/white onion.
1/2 finely chopped jalapeno 
1/4 tsp. kosher salt


Directions:

  Cut avocados in half and remove pit with spoon.  Scoop the avocado pulp into medium bowl, toss and coat with lime juice.  Add salt, and smash with fork until smooth.  Fold in remaining ingredients and stir well.  Taste, and if you want to experiment with different seasonings, cumin makes an excellent addition.  :)  Enjoy.
