Breakfast Crepes - Recipe Submitted By: Robyn Martell
Ingredients:
3 cups of milk
6 eggs
2 cups all purpose flour
3 teaspoons of sugar
1/4 teaspoon of salt
1 tsp. vanilla
1/2 stick of butter
Directions:
In a small bowl, whisk eggs and milk together. Combine the flour, sugar, and salt; add to milk mixture and mix well. Refrigerate for 1 hr. or overnight.
Melt some butter in an 8 in. nonstick skillet or cast iron pan, over medium heat; pour a large spoonful of batter into center of skillet. Cook until the top appears dry, flip and cook 15-20 seconds longer. Remove, and allow it to cool. Repeat with remaining batter, adding butter to pan as necessary,
Spread crepes with cream, cinnamon, butter, fresh fruit, jam, or any other fruit preserves that you desire (your choice). :) Enjoy!
